there are a few confusions here, i hope i can clear this up.
generally, your explanation is correct. "otokonohito" and "onnanohito" would mean adult man and adult woman, respectively, and "otokonoko" and "onnanoko" would mean a boy and a girl, respectly. "otoko" and "onna" would simply mean "male" and "female".
First confusion. "Watashi" is mostly used by women. When a man regards himself as "watashi", it sound VERY formal, for example, a scientist who's won an award would refer to himself as "watashi" in his speech. It's more common for males to say "boku", instead of "watashi". In casual situations, like when a guy is talking to his friends, it's quite common for him to use "ore".
A boy could say "boku wa otoko desu" to mean "i'm a boy". A man could say "boku wa otoko desu" to mean "i'm a guy/man". otoko/onna is usually used if you're referring to yourself because calling yourself otokonohito/onnanohito sounds a bit too objective. On the other hand, if you call someone "otoko/onna" it sounds a bit rude.
